BBQ Marinade Recipes

There's nothing like the smell of good grilled meat... Summer is not complete without them, and they add to the taste of holidays and weekends with friends, in the garden or on the terrace, to the delight of the neighbors. For grilling skewers, you can use any means of heating, whether it's a gas barbecue, an electric grill, an ember grill, or an iron grill.

These marinade recipes will be sure to put a smile on everyone’s face.

Provencal marinade: pork

There is this distinct smell of herb de provence, smoke, and grilled meat in the warm summer air in the South of France.

Ingredients:

Mix all the ingredients, add your meat and let it marinate for 1 hour.

Italian marinade: shrimp

The Italian word "grigliata" simply means grilling out. A grigliata is a traditional Italian cooking style that emphasizes simple, rustic foods that are grilled over wood fire to enhance their flavors.

Ingredients:

  • 1 cup extra-virgin olive oil
  • ¾ cup red wine vinegar
  •  Zest of 1 lemon
  • ¼ cup freshly squeezed lemon juice (about 2 lemons)
  • 4 cloves garlic, peeled, smashed and roughly chopped
  • 1 bay leaf
  • 1 tablespoon thyme leaves
  • 1 tablespoon oregano leaves
  • 1 tablespoon basil leaves, rolled and chopped into chiffonade
  • 1 teaspoon granulated sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon red pepper flakes, or to taste
  • 2 lbs of shrimp

Mix all the ingredients, add your shrimp and let them marinate for 30 mins

 

Malaysian marinade: chicken

Although there are many versions of chicken satay throughout Asia, this Malaysian recipe will leave you drooling for more.

Ingredients:

  • Lemongrass
  • Garlic
  • Shallots
  • Turmeric powder
  • Coriander powder
  • Chili powder
  • Salt and sugar
  • Deboned chicken thighs (or chicken breast)

Add all the ingredients (except for the chicken) into a mortar and pestle well until it becomes a nice fragrant pasta. Add the chicken and let it marinate overnight. 

West Indies Marinade: lamb

This simple West Indies recipe will please everyone including children. Fret not, the vegetarian chili pasta is not spicy at all but still gives a fragrant aroma.

Ingredients:

In a container, put the lime juice, minced garlic, vegetarian chili paste and chicken. Add salt and pepper. Mix well and refrigerate for 1 hour.

A Few Last Words:

If you use wooden skewers for your BBQ it is best to soak your wooden skewers in water at least 2 hours before use. This is to stop the skewers for setting themselves on fire while grilling estpecially if you are using wood or charcoal.
