You may have tried carrot cake and banana bread, but have you ever eaten Zucchini bread? According to food historians, zucchini bread originated in the 1960s and 1970s in the US. There were several marketing campaigns promoting it (as well as carrot cake and banana bread) as a healthy alternative to standard desserts. They are both clever and effective ways to make children and adults eat more vegetables. Sneaky, right?!

Zucchini Bread Recipe

Directions:
Lightly grease and flour two 8 x 4 inch pans. Preheat the oven to 325 degrees F (165 degrees C).
In a bowl, combine the flour, salt, baking powder, baking soda, and cinnamon.
In a large bowl, combine sugar, vanilla, oil, and eggs. Sift the dry ingredients and add them to the creamed mixture. Beat well. Incorporate zucchini and walnuts. Transfer the batter into the pans.
Bake for 40 to 60 minutes. Insert a tester in the center and see if it comes out clean. Let it cool on a rack for 20 minutes. Remove the bread from pan, and let it cool completely.
