Originating in Italy. Sicilian blood oranges from San Giuliano are cut into quarter inch-thick slices, blanched briefly to remove their bitterness, and then delicately caramelized in simple syrup until glossy and soft. The slices are placed in a jar and topped with a thick reduction of orange juice and simple syrup with the utmost care. Use to decorate any cheesecake or customary desserts like Sicilian cassata, can also be used for a perfectly roasted duck.
