Chocolate Chunk Banana Bread Cinnamon Rolls

Healthy cinnamon rolls?? You may be thinking it's not possible...or if it is possible, it must taste awful. Think again, because this recipe is beyond delicious with very little sugar and no butter! The combination of banana, cinnamon, and chocolate will fulfill anyone's taste buds while satisfying your sweet craving, too. Here is the recipe for chocolate chunk banana bread cinnamon rolls, featuring Big Spoon Roasters and Coop's Microcreamery:

Chocolate Chunk Banana Bread Cinnamon Rolls

Ingredients

Dough

1 tbsp. sugar (any kind)

1/2 tsp. salt

1/2 tbsp. coconut oil, melted

3/4 c. almond or skim milk, warmed to 110°F

One package of active dry yeast

1.5 c. all-purpose flour

Filling

1 tbsp. Big Spoon Roasters Mission Almond Butter

1 tsp. cinnamon

2 mashed ripe bananas

1 packet of stevia

1/2 c. chocolate chips

1-2 tbsp. Coop's Hot Fudge Sauce

Directions

Set oven to 350 degrees. Stir together the sugar, salt, coconut oil, and warm milk, then sprinkle the yeast on top. Wait 15 or so minutes for the mixture to froth. It may take a little longer if your kitchen is cold, so be patient!

Once the dough is frothy, mix in the flour. Add 1-2 tbsp. of extra flour at a time if the mixture is still wet. Do so until the dough begins to pull away from the sides of the bowl. At this point, knead the dough on a well-floured surface until it quickly springs back when you press your finger into it (about 5 minutes). Add some extra flour to the surface, then roll the dough into a 10 x 14-inch rectangle.

Mix together all the filling ingredients (Big Spoon Roasters Mission Almond Butter, cinnamon, bananas, stevia, and chocolate chips). Add some coconut sugar if you'd prefer it sweeter. Spread this filling onto the dough, and be sure to leave a 1-inch border on the two long sides of the rectangle.

Here's the fun part: roll the whole rectangle into a log, starting on one of the long edges. Once rolled (be sure it's very tight!), cut the log into 8 pieces with a knife. Then, place the 8 rolls into a lightly oiled pan and let them rise for about 30 minutes, or until they double in size. Put them in your preheated oven for 15-18 minutes. Meanwhile, heat up your Coop's Hot Fudge Sauce to be warm once the cinnamon rolls come out of the oven. Drizzle rolls with the sauce and serve!
