Mother's Day is coming up quickly, and you know what that means: it's time to think about the perfect Mother's Day gift! While there are plenty of pre-made gifts out there (check out our gift sets for some ideas), sometimes a homemade gift is the perfect way to show that special someone how much you care. Handmade cards, photo albums, or other crafts are great, but a batch of homemade cookies makes for a thoughtful gift and will satisfy her sweet tooth! Here's a quick recipe for Chocolate Caramel Cookies that'll make a perfect Mother's Day gift.

Ingredients

1 c. softened butter

1 c. brown sugar

1 c. + 1 tbsp. white sugar (separated)

2 tsp. vanilla extract

2 large eggs

1 tsp. baking soda

3/4 c. unsweetened cocoa powder

1 c. walnuts, chopped

2 boxes of Jacobsen's Salty Caramel Candies (48 candies total)

Directions

Preheat oven to 375 degrees. Grease 2 baking sheets.

Beat butter until soft and creamy, then gradually beat in brown sugar and white sugar. Next beat in the vanilla extract and eggs. In another bowl, separately combine the baking soda, flour, and cocoa then gradually beat in with previous butter mixture. Mix in 1/2 cup of walnuts, then cover and refrigerate for 2 hours.

In a small bowl, mix together 1 tbsp. white sugar with the remaining walnuts. Once the dough is chilled, divide the dough into 4 equal parts. Put 3 parts in the refrigerator (to keep them cold), and divide the 1 remaining part into 12 pieces. Press each of the 12 pieces around a Jacobsen salty caramel candy and immediately roll into a ball. Dip the tops into your walnut/sugar mixture and place 2 inches apart, with the sugar facing up, onto your greased baking sheets. Repeat the process with the other 3 parts of the dough.

Bake in 375 degrees for about 8 minutes, then let cool for a few minutes on the baking sheets. Serve and enjoy!
