Roque Anchovies in Sunflower Oil is made with a traditional method that is hundreds of years old. Starting with fresh caught anchovies from the shorelines of Collioure, a coastal village by the Mediterranean that are salted and laid to cure for three months. The filets are then deboned and jarred in sunflower oil allowing the flavors to fully develop.
