Roque Anchovies in Salt is made with a traditional method that is hundreds of years old. Starting with fresh caught anchovies from the shorelines of Collioure, a coastal village by the Mediterranean that are then salted and laid to cure for three months allowing them to fully mature.

Tasting Suggestions

Anchovy filets are jarred with spine attached, soak in cold water 20-23 minutes before serving to de-salt then gently remove spine.

Enjoy with capers and olives on crostini, mix in with fresh tomatos and peppers for added flavor to a light salad.
