Augusta Panettoni, a specialty Christmas cake was founded in Milan in 1945 by a master pastry chef, using the traditional "Panettone Milano" recipe. Today they maintain the same secret recipe of using a special leavening agent, which is mixed with the best butter in Europe, candied fruits and the best quality raisins. The dough is left to rise naturally for several days, then cooked slowly and carefully and allowed to cool for a full twelve hours, giving this gourmet cake its unique fluffiness and flavor.
