Calissous are smaller versions of the Provençal specialty, Calissons, which are almond-shaped candies coated with smooth royal icing. They are made with a soft mixture of finely crushed almonds and candied fruits (melons, orange peels), honey and orange blossom.

Daniel Maffren built Maffren Confiseur in the 1950s when he settled down in the village of Poët post-war. Built on the premises of a former chocolate factory, he transformed the plant into one that manufactured Calissons and Nougats from Provence.
