Pain d'epices, or French honey spice cake, first created by Charles Fortwenger in 1768 in his workshop in Alsace. As Alsace was on the border between France and Germany, the influences from both cuisines came together to create this gingerbread cookie.
Even after two centuries later, Fortwenger continues to adhere to its founder's original recipe. The dough is a simple mixture of flour, honey and sugar that sits at room temperature for 4-6 weeks before adding the 7 secret spices. Every stage of production is done by hand with respect to tradition.
